  1. Firstly, cook the lentils and set aside. I cooked it in a steamer because I wanted the lentils slightly whole. Wash the dal well. Add it to a vessel. For 1 cup dal, add 3 cups of water and steam for 15-20 minutes..
  2. Heat oil in a clay pot/pan. Add mustard seeds and allow it to crackle. Add cumin seeds and let it sizzle for few seconds. Add asafoetida..
  3. Add the dried red chillies. Now add the chopped garlic and saute lightly for 30 seconds..
  4. Add green chillies and curry leaves and saute for sometime. Now add all the spice powders and saute it for a minute. Add the chopped pearl onions and saute it for a minute..
  5. Next add the chopped tomato and salt and cover and cook till the tomatoes are soft and mushy..
  6. Add the washed and chopped spinach leaves and cover and cook for 5 minutes till the spinach gets perfectly cooked. You can add more or less spinach according to your taste..
  7. Add the cooked toor dal. Mix it well and cover and cook it for 5 more minutes..
  8. Spinach Dal is ready to serve. For second tempering which is optional, heat oil in a tadka pan. Add dried red chillies. Off the flame. Add little red chilli powder and mix it. Pour this tempering over the prepared dal palak. Mix and serve..
