- Wash 1 cup of toor daal and 1/4th cup of moong daal nicely and soak with water for an hour..
- After soaking, place daal with 1 litre of water, 1/2 teaspoon of turmeric powder,1 black cardamom and 1-2 bay leaves..
- Pressure cook the daal for 2 whistles. Set aside..
- Chop onion, tomato, garlic and ginger..
- Heat 2 tablespoon of oil. Temper 1 teaspoon Cumin seeds..
- When cumin seeds splatter, add in chopped garlic..
- Cook for few seconds and then add in chopped onions..
- Cook until onion becomes soft..
- Next add in chopped onion and cook for 2-3 minutes..
- Add in dry spices like 1/2 teaspoon of turmeric powder, 1 teaspoon of Kashmiri red chilli powder and little salt..
- Stir well to mix. Add in 2-3 tablespoon of water..
- Mix well, cover and cook in medium low heat for 5 minutes..
- When tomato cooks well, remove the lid and fry the spice mixture to very high heat. Flame should touch the mixture. That's why I used small pan to cook..
- Continue to cook in high flame for about 5 minutes by tilting the pan towards flame. Smoke should come out from the pan. But don't burn the mixrure..
- Immediately transfer the mixture to cooked daal..
- Mix well, adjust the consistency. If required add in 1/2 cup of hot water. It's not necessary to cook again in this stage..
- For tadka heat 2 tablespoon of ghee to a pan..
- Add in dry red chillies, hing or asafetida and 1/2 teaspoon of.red chilli powder..
- Immediately pour to the prepared daal..
- At last add in chopped coriander leaves and some green chillies..
- Give a last stir and smoky daal tadka is ready..
