- Firstly, cook the lentils and set aside. I cooked it in a steamer because I wanted the lentils slightly whole. Wash the dal well. Add it to a vessel. For 1 cup dal, add 3 cups of water and steam for 15-20 minutes..
- Heat oil in a clay pot/pan. Add mustard seeds and allow it to crackle. Add cumin seeds and let it sizzle for few seconds. Add asafoetida..
- Add the dried red chillies. Now add the chopped garlic and saute lightly for 30 seconds..
- Add green chillies and curry leaves and saute for sometime. Now add all the spice powders and saute it for a minute. Add the chopped pearl onions and saute it for a minute..
- Next add the chopped tomato and salt and cover and cook till the tomatoes are soft and mushy..
- Add the washed and chopped spinach leaves and cover and cook for 5 minutes till the spinach gets perfectly cooked. You can add more or less spinach according to your taste..
- Add the cooked toor dal. Mix it well and cover and cook it for 5 more minutes..
- Spinach Dal is ready to serve. For second tempering which is optional, heat oil in a tadka pan. Add dried red chillies. Off the flame. Add little red chilli powder and mix it. Pour this tempering over the prepared dal palak. Mix and serve..
