Steps to make Veg Dum Biryani:

  1. First, cut all the vegetables as shown in the ingredients. Wash the basmati rice and soak it in water for 1/2 hour as required..
  2. Now add all these vegetables in a big bowl and add salt, turmeric powder, red chilli powder, cinnamon piece cardamom, cumin seeds, ginger + garlic paste, cardamom powder, green chillies chopped into long slices, mint leaves and yoghurt. Mix. Now let this bowl marinate on the side..
  3. Now add oil in a pan, add long chopped onion and fry brown on medium flame. Drain all the oil from it and save this oil..
  4. Now let's make rice. For this, drain all the water from the rice steeped in water. Now boil water as required in a frying pan. Add cardamom, cinnamon stick, green chilli, salt and onion oil and Add rice in it. Cook 80% rice on high flame. Drain the remaining water and dry the rice..

  6. Now in a steel pot add browned onion and oil, add marinated vegetables and biryani spices, mix and cook vegetables on high gas flame. Now add green peas and turn off the flame..
  7. Now add cooked rice in to the vegetable, add saffron steeped in milk, add leftover rice water and fried onion oil, mint leaves, green coriander leaves and brown onion (if you want, I have made two layers of biryani. You can do this in another three or four layers.).
