- Quarter potatoes and steam or boil them.Strain,cool and mash them.Heat 1 tbsp oil and sprinkle hing/asafoetida.Add finely chopped onion.Fry golden brown and add chopped green chillies.Then add the mashed potato alongwith red chilli powder,roasted jeera powder,ginger paste,salt and sugar to taste and garam masala. Toss all till well browned.Add chopped coriander and toss.Set aside to cool..
