Instructions to make Sambar:

  1. Wash and strain the dal at least 3 times then soak dal in water for 1 hour.
  2. Pressure cook dal with 2 cups water (12 mins or 3 whistles).
  3. Heat oil and add mustard seeds, fenugreek, cumin, garlic, dried red chili, garlic and saute till fragrant.
  4. Add all the veggies and mix well for about 5 mins. Add salt..
  5. Add 0.5x turmeric, 2x red chili, 2x sambar powder, 0.25 asafoetida.
  6. Add enough tamarind broth to barely cover the veggies and some water.
  7. Add jaggery/sugar.
  8. Bring the broth to a boil.
  9. Add curry leaves.
  10. Add pressure cooked dal.
  11. Add salt to taste.
  12. Bring to boil and add cilantro.
